Spicy Gooseberry Pickle Enhances Flavor of Cucumber Yogurt Curry Dish

This delightful vegetarian dish combines a cooling cucumber and yogurt curry with a fiery gooseberry pickle, creating a harmonious balance of flavors perfect for summer dining. To prepare the Hot Gooseberry Pickle, start with 250 grams of gooseberries combined with a pickling mixture of apple cider vinegar, water, caster sugar, and salt. After washing and drying the gooseberries, simmer the vinegar mixture until the sugar and salt dissolve, then soak the gooseberries for ten minutes. The Cucumber Yogurt Curry is prepared by blending cucumbers with desiccated coconut, green chilies, garlic, coriander, black peppercorns, and sesame seeds into a smooth paste. Whisk natural yogurt to a smooth consistency, add the cucumber-coconut mixture, and refrigerate until thoroughly chilled. For the finishing touch, prepare a tempering with curry leaves, fenugreek seeds, mustard seeds, cumin seeds, and dried red chilies in hot oil. Pour this spiced oil over the chilled cucumber curry just before serving.
